hi,
I am starting this thread to get all the rice recipies in one column..i putiing those i know..i request you to add anything new that you know..thanks

CURD RICE
Ingredients
6 cups of cooked white rice
1 tsp mustard seeds
3 cups of plain yoghurt
1 sprig curry leaves
2 green chillies, chopped finely
2 tsp coriander leaves, chopped finely
1 small piece of ginger chopped finely
1 dry red chilli, cut into pieces
A pinch of hing(asoefetida)
Salt to taste
1 tablespoon cooking oil
Method
Mix the ginger, coriander leaves, green chillies
and salt into the yogurt.Mix well.
Add this to the rice and mix well.
Season with mustard, curry leaves, red chillies and
hing.
Eat with any hot pickle.

CAPSICUM RECIPIE:
taken from ammas.com
basumathi rice 2 cups
capsicum 2 medium
onion 1
ghee 2 tablespoon
oil 2 teaspoon
grated coconut 1 tablespoon
bengal gram dhal 2 teaspoon
urdu dhal 1 teaspoon
cardamom 1
cloves 1
cinnamon stick 1
dry bay leaves 2
cummin 1 teaspoon
coriander seeds 3 teaspoon
red chillies 4
salt 1-1/2 teaspoon
Cooking procedure:
Fry the rice in a tablespoon of ghee till the rice is warm when you touch it. Do not overfry. Cook the rice till soft. Spread the cooked rice in a large plate and allow to cool. In a kadai put one teaspoon ghee and fry the masala ingredients. Let it cool and then dry grind it along with the salt and coconut.
Cut the capsicum into small pieces and cook in some water. Drain off the excess water and keep aside. Add the oil to the pan and sauté the onion (cut into fine pieces) until it is tender. Add the cooked capsicum and the masala powder and mix well. Cover and simmer for 2 minutes. Add the cooked vegetable, grated coconut and masala to the rice. Mix thoroughly. Garnish with chopped coriander and fried cashew nuts.

Piya
Pudina(Mint) Rice for u:-
1kg basmati rice(washed/drained)
2 cups mint leaves(firmly packed and washed)
8 cloves garlic, 4cm ginger,5 green chillies
61/2 cups water, 2 tbsp ghee,2tbsp oilm 21/2 tsp salt
1 onion(sliced) 11/2tsp cumin seed,5 dried chillies
4 bay leaves
method;-
Blend 11/2cups of mint leaves,garlic,ginger,green chillies 1cup of water.
Heat ghee and oil-fry dry chilli,cumin,bay leaves,onions till fragrant
Add drained rice-fry till fragrant
All rice has to be coated with well with oi.
Transfer to rice cooker. add remaining mintleaves,water,salt,blended mixture.
DON;T FORGET TO 'ON' THE RICE COOKER.
