Potato Rice

Hi All
I made this Potato Rice yesterday and it came out so well. Thought I'll share with all of you.
Potato Rice
==========
You need to parboil potatoes sliced as cubes first.
Need to cook rice as well, be careful not to overcook rice, the grains should remain separate.
Slice oinions (1 big)
To Make as paste
4 Green Chillies
a small bunch of coriander leaves
a small bunch of mint leaves
little onions and 2 or 3 garlic pods
To grind as powder (after roasting the below till they change color)
- 3 red chillies (kaanja milagai)
- 2 tablespoons of coriander seeds
- 1 teaspoon of urad dal
- 1 teaspoon bengal gram dhal
- 1 teaspoon sesame seeds
Method
Place the kadai with little oil and add mustard seeds and seeragam first.
Then, add sliced onions, add the potatoes and keep frying for 2 minutes. Thereafter add the paste and saut for 2 minutes...Add salt and a pinch of turmeric to this mixture.
Then add the powdered spices and keep in low flame for 2 minutes.
Now the masala is ready...once it is a little cold mix with rice and add little gingelly oil if it is too dry and mix thoroughly.
Let me know how it turned out, it was a hit when I made it yesterday.

Thanks for the feedback Suju, It is a reat pleasure to see the recipes posted here being tried out...
Will Post more Rice varieties that I try at home.

Brinjal Side Dish
=================
This is a very easy recipe that goes well with pulao or ghee rice ... Pls try and let me know if you liked it. I tried this last week and it turned out so well.
To Grind
--------
- 1 medium sized onion, 3 pods of garlic
- coriander leaves and curry leaves (little)
- 1 tomato medium size
- 3 green chillies
- turmeric powder, a pinch
- chilly powder
- cinnamon, cloves and cardamom (little)
Method
------
Heat 2 tablespoons of oil in pressure cooker and
- Fry 1 big onion sliced
- Then, add around 8 to 10 cut brinjals (violet small)
- after frying for 2 minutes, add the ground paste and fry for a minute.
- now add 1 tablesp coriander powder and 1/2 teaspoon cummin seeds powder and salt, keep frying for a minute.
Take care to add a tablespoon of water if it gets sticky when frying the above.
now, close the cooker and leave the cooker to give one whistle.
In the end after opening the cooker, add a tablespoon of beaten curd and add some chopped coriander leaves.
The dish is ready to serve....Enjoy !
