I asked my chinese friend how to make tofu. She tells me that even in china people buy tofu , do not make it anymore. My educated guess is that it is from Soya milk - just the way we make paneer from milk.

Hi, Soudamini thanks for your response. I will
visit the website that was given by you, but I
don't think that I could find the 'tofu' preperation. Anyway thank you very much.

I'm not sure what do you mean by paneer?!
But if you are looking for soya milk drink, then here it is,
2 cups of soya beans (soak overnight)
2 cups of sugar
1/2 cups of water
First boil, the sugar and water to make syrup.
Blend the beans with water.
Take a piece of thin cloth, pour blended soya on it, and squeeze out the juice.
Now add another five cups of water to the juice and boil it.
Let it boil only once (oru kothi).
Let it cool and add desired amount or syrup (sugar water).
Remember to keep the balance in the refrigerater.

1. First get the soya milk (1 ltr).
2. Heat it till it hot (not boiling).
3. Add either 1/2 tsp of vineger or lemon juice.
4. Stir throughly and you will see that the milk curdles.
5. After 5 minutes add another 1/2 tsp so that the entire milk curdles.
6. Stain the whey (you can use it for buttermilk if you like it) through a thin cotton cloth.
7. Once the curds have been collected, cover them with cloth put heavy weight on it and leave aside for about 8 hours.
8. Then you have a well set tofu. Clean it in cold water to remove stains of the juice/vineger. Do it atleast twice.
9. Dice the tofu and use it as paneer. Its bland ... but very healthy.

what happenedn to the tofu devotee??
did she finally get to make?
Anyways heres the recipe:
Tofu pronounced as doh fuu (Cantonese) is also known as bean curd, it originated in China 2000 years ago. Tofu is made from dry soybeans which are soaked in water till softened, then crushed and boiled. The crushed material is separated into pulp and milk. A coagulent is added to the soy milk, to separate into curds and whey. The curds are poured into molds and left to settle. And Thats Tofu!!!
Dont ask me what a coagulent is.

hello tofu lovers , few more details.
you can use Nigari, vinegar, lemon juice, Or epsom salt as a coagulant(solidifier).
vinegatr and lemon juice give softer tofu with a tarty taste.
to prepare thesolidifier use 1 cup warm water and add one of the following
2tsp. epsom salt
2tsp nigari
1/4 cup vinegar
1/4 cup lemon juice.
heat the soy milk andsprinkle solidifier on the hot milk. slowly stir in one direction.
sprinkle more coagulant and leave it covered for a while.
finally seperate tofu just like paneer.
by the by
nigari is made by seperating sodium and water from sea water.
good luck.
