I have been trying many soup recipes for the past few weeks. I would like to share 2 of the recipes that tasted good.
Chicken Soup with Oats
Chicken breast with bone 1 (Or you can use any other parts)(Cut into small pieces, wash and drain the water)
Onion 1, small, chopped
Garlic 2 cloves, crushed
Tomato 1, medium size, peeled and chopped (or you can use tomato paste)
Cinnamon 1 small piece
Whole black pepper 2
Bay leaf 1
Oats 5 tbsp
Oil 2 tbsp
Salt
Heat oil in a pressure cooker.
Sautι onion, garlic, black pepper and cinnamon till onions are translucent.
Add the tomatoes and chicken pieces with salt.
Fry them for a few minutes in medium high heat with continuous stirring.
Add 5 cups of water. Add the bay leaf.
Cover the cooker and pressure-cook for 10 minutes. When you open the cooker, chicken must be overcooked.
Add oats and cook again. (Not the pressure-cooking method)
Cook till the oats are cooked and the soup is thick.
I have a doubt in the measurement of oats. Use as much to get a thick consistency.
Serve the soup with the chicken pieces. As you have overcooked the chicken, the bone might have separated from the piece. If so, remove the bones.
Add ½ tsp of lemon juice per bowl while you serve (if you wish).
Mushroom and pepper soup
Mushroom 1 lbs, sliced
Chicken broth 6 cup (Or mix 4 cup water with 2 pieces of chicken stock)
Jalapeno pepper 2 or 3, sliced to thick circles
Red bell pepper 1, remove the seeds and slice to small pieces.
Onion ½, chopped
Cherry tomatoes 6 (Or 1 big tomato peeled and chopped)
Tomato paste ½ tsp (optional)
Skin of a lemon 1 tsp (Take a whole green lemon and grate the skin using a grater)
Cilantro- a few
Boil chicken broth in a big pot.
Add mushrooms and onion.
When the mushrooms are half done, add jalapeno and red bell peppers.
After 3,4 minutes, add tomatoes and tomato paste.
Add the grated lemon skin.
Continue boiling in a medium high heat.
Add the cilantro leaves and turn off the flame.
Serve as it is, you dont have to drain to remove the vegetables.
Add ½ tsp of lemon juice per bowl and mix well when you serve.
I have tried adding some broccoli pieces with mushrooms and it tasted good.

Hi Rimi,
Happy to know that you liked the mushroom and pepper soup. The jalapenos give them a good taste. But if you add more jalapenos, it will be very spicy.
Please post if you have any tried soup recipes.

yeah...mini's mushroom soup is famous at home..i just try uot simple tomato soups..they turn out..umm..all right.
