Its chicken in a moderately spice sauce that I think could be thickened with a few lentils. Its yellow, contains some garlic and cilantro but I can't distinguish any other flavors. I read that vindaloo means 'vinegary' but thats all I can find.

Hello JLG!
Although Vindaloo is generally made with Pork meat, other red meat such as lamb/goat works equally fine
Basically made with whole red chillies and other whole spices as cumin seeds, peppercorns, cardamom, cinnamon and cloves along with ginger and garlic. These are then ground with Toddy vinegar. Malt vinegar is a good substitute. White vinegar is commonly used, but personally I feel this is too sharp.
Chop onions and saute, in oil till light brown. Add the ground spice paste and cook till oil separates. Add the meat and cook till tender (use water). Add seasoning.
Although I like the Parsi Vindaloo more, this is more popular in Goan foods.
Potatoes are commonly added in big chunks to complement the meat
If I have to use chicken - I would prefer the dark meat.
