You can make potato masal as usual. When you pour the idli batter in the idli mold, put litle bit masal in the middle and then steam it.
Or you make the idlies as usual and then crumple it like puttoo. Then season mustard seeds, urad dhal, curry leaves, and then fry finely chopped onion. Add boiled and diced potato. then add a gropund paste of coriander seeds, red chillies, turmeric,coconut, and (if you like tofu, add last to the paste and blend well) to the onion. After 5 minutes, add the idli puttoo and mix well. Add salt to taste.
