i made carrot halwa last week. but i added more sugar and it has become hard. so can somebody tell me what i can do with that? I mean can i do some alteration with that? thanks

Hello Priya,
If your Carrot halwa has become hard, do the following repair job.I promise you that it will be a good result.
REPAIR JOB
Take some ghee in a kadai and heat it.When the ghee is sufficiently hot, add about a cup of milk and heat it on a low flame.When milk starts boiling, add the hardened Halwa which you want to repair.Stirr briskly so that you will get a smooth mass of halwa.
Go on stirring till the halwa is smooth.Now you need to reduce the sweetness of Halwa.You either add briskly sauted jullienned Carrots about one cup or add some milk powder dissolved in little water.I am however not of favour of adding milk powder as it leaves powdery smell.Use only sauted carrots.Insted you can add powdered badham or cashew.If you get khoya, it is the best solution.
Remove from flame and allow it to cool.Garnish with Badham and cashew pieces.
As you have not given details about the amount of Halwa you have made, I am not able to suggest the quantities of repair materials.

Hi Suja,
Here's a recipe for carrot halwa and it's from the website www.webindia123.com.
CARROT HALWA
Ingredients :
Grated Carrot - 8cups
Ghee - 4tbs
Milk - 6cups
Sugar - 2cups
Almonds or cashew nuts - few
Saffron or cardamom powder for flavouring
Method :
Sauté the grated carrots in ghee. Add milk and cook till very soft. Add sugar, simmer for a while, till sugar dissolves and the mixture thickens. Add saffron or cardamom powder. Garnish with flaked almonds or cashew nuts. Serve hot or cold as desired.

This is a north indian style of making carrot halwa. The recipe is
Carrots - 6
Milk to soak the carrots.
Condensed milk - 1 tin
sugar - 5 tbsp
ghee - 2 tbsp
elaichi - 1 tsp
Badam
Grate the carrots. add enough milk to soak the carrots. when the milk starts to dry up add condensed milk and sugar and stir. When the gravy thickens it will be like milk khova. Now add elaichi. After 2-3 mins, turn it off and tarnsfer into a bowl. Fry sliced almonds in ghee and decorate on the halwa. Note: When the halwa thickens, do not wait till it becomes very thick . take it out before it thickens too much as it will thicken once it cools down.
