Brinji rice recipe needed

Hi Manju,
Onion-1 (cut lengthwise)
tomato -1
green chillies-2
garlic-2
ginger-little(crushed)
chilli powder-1 tbsp
corainder pow-2 tbsp
basmati rice(wash and soak for 15 mins)-1 cup
vegetables-frozen or fresh(carrot,beans,peas,potato)
heat oil(more) in cooker and add bay leaves,clove(2),cinnamon and then add onion,ginger,garlic .saute till onion smell goes.
add tomato,green chilli and then add chilli,coirnader adn turmeric powder.saute for 2 mins.add vegetables(1/2 cup).then add 1-1/2 cups of water adn pressure cook it for 1 or 2 whistles.
Basmati rice will cook soon.so u can reduce the whistles acc to ur wish.
garnish with coriander leaves.

Brinji Rice
Ingredients
Ingredients: Basmati Rice 2 cups; Butter 2 -3 Tbspns for frying the Rice; Onions - 2 finely sliced; Green Chillies 4-6 slit lengthwise; Sombu-1tspn; Brinji Leaves-2 nos; Curry leaves - a sprig; Elaka-4-5 nos.; Cloves - 6-8 nos; Pattai 2 nos of 1'' long pcs.; Mint Leaves-12/15 nos; Garlic 8-10pods; Ginger- 1" pc. Or you can use Ginger/Garlic paste 1 Tbspn. Oil-4-6 Tbspns. For Garnishing:Finely chopped Corriander leaves - 2-3 tbspns. Salt to taste.
Method
Method: Wash Rice, drain well, fry in butter on low flame for 8-10 mins till rice is crisp - put into the Electric Cooker Bucket & keep. In a Kadai (wok) add Oil when hot add the Whole Spices, Bay Leaves, Curry Leaves & fry till the cloves pop up, now add the Onions & fry till brown, lower flame -add slit Green Chillies, & Ginger/Garlic Paste & fry for 3-4 mins add the Sombu, Salt & Mint leaves & continue to fry for a further 3-4 mins till a nice smell arises, add this fried masala mixture to the Rice in theCooker Bucket, add the required quantity of water - 3 cups; cover plug it on & leave to cook - when done it will automatically cut off - leave to cool down for 10 mins - then fluff up with fork, garnish with chopped coriander leaves. PN: You could add mixed Vegetables - ½ a cup if desired when adding the masala mixture to the Rice.

Hi, Some Brinjal (Baingan) Recipies for you. Tried and collectd from various websites..
CHATPATE BAINGAN
Ingredients:
8-10 small baingan (brinjal)
1/2 cup oil
1 tsp ginger paste
8-10 curry leaves
2 onions, chopped
3 tomatoes, chopped
3 tbsp tamarind
1/2 tsp chili powder
1/2 tsp coriander powder
1/2 tsp cumin powder
Salt to taste
1 tbsp coriander leaves, chopped finely
Method:
1. Wash the brinjal and wipe it dry. Make 4 slits along the length of the brinjal, taking care to keep stern intact.
2. Heat oil in a frying pan and fry the brinjal for 4-5 minutes. Drain excess oil and keep aside.
3. Heat another 3 tbsp of oil in the same pan and fry the onion until golden brown. Also add ginger paste, curry leaves and fry for 4-5 minutes. Then add tomatoes and fry until oil separates.
4. Now add chili powder, coriander powder, cumin powder, salt, tamarind pulp and fry for few more minutes.
5. To this curry, add fried brinjal, coriander leaves and cook until the brinjal is tender.
6. Serve hot with chapaties or pulao rice.

BAINGAN MASALA
Ingredients:
1/2 kg small long-shaped brinjals (baingan)
2 onions, chopped
6 tomatoes, chopped
1 small garlic clove
Salt & black pepper to taste
1 tsp cumin Seeds
1 tsp red chili powder
1/4 tsp turmeric
1/2 cup methi leaves (fenugreek)
2 sprigs curry leaves
Oil for frying
1 1/2 tsp vinegar
4 tbsp ghee or butter
Method :
1. Cut brinjals into half from the middle and fry them in oil.
2. Brinjals are not to be fried for long, so take them out and keep aside.
3. Take some ghee in a pan and put in chopped onions, garlic, cumin seeds, methi leaves, curry leaves, salt & black pepper to taste, red chili powder and turmeric.
4. Fry for 2-3 minutes and put in fried brinjals and chopped tomatoes
5. Put in a little of water to make gravy and let it simmer for 10-15 minutes, until the gravy gets thickened.
6. Add vinegar to it and keep it for a while before serving

BHAGARA BAINGAN
Ingredients:
1/4 kg small brinjal (baingan)
1 tsp ginger-garlic paste
2-3 onions, chopped
1 tbsp sesame seeds (fry a little)
1 tbsp grated coconut
1 tbsp roasted groundnuts
1/2 tsp turmeric powder
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp garam masala
1-2 tbsp tamarind pulp
1 tsp red chili powder
Salt to taste
4-5 tbsp oil
Method:
1. Slit brinjals from both the sides without cutting it completely.
2. Make a smooth paste of sesame seeds, roasted peanuts and grated coconut.
3. Heat a pan, pour 2 tbsp of oil in it and fry the brinjals until they become soft and keep aside.
4. Pour the rest of the oil in the pan and heat it. Add ginger garlic paste, chopped onions and fry until the onions turn light brown.
5. Add the masala paste. Fry for a minute and keep stirring. Now add turmeric powder, cumin powder, coriander powder, red chili powder and mix well.
6. Then add the tamarind pulp, salt and stir well. Now add the fried brinjals, cover the pan with a lid and cook on a medium flame for 5 minutes or until the brinjals are completely cooked.
7. Add the chopped coriander and serve hot with chapaties or plain rice.

Hi Manju
For Easy Brinjal Rice
Grind
Big onion - 1 Big
Green Chillies - 8
Garlic - 5
Kirambu(Cloves) - 2
Pattai(Cinnamon) - 2
Elakai(Cardamom) - 1
Coriander leaves - 1/2 bunch
Basmati Rice - 2 cups
Brinjal - 4 medium
Bay leaf - 2
Cashew - 6
Ghee - 2 tbsp
Oil - 2 tbsp
Salt to taste
Method
- Soak rice for 1/2 with 1/2 tsp salt and drain.
- Heat oil and Ghee. Season with bay leaves.
Add onion and fry till golden brown.
- Add the ground masala and fry till the oil
seperates
- Add brinjal (Cut into vertical pieces) and fry
till the color changes.
- Add the drained rice and fry for 5 minutes.Add
salt as required
- Cook in rice cooker with 1 : 1 1/2 cup water

In the above receipe do not grind onions. Use it only while frying
