Method:

One more variation in the kootu-use peanut, chick peas(black & white), soak in the previous night and boil them with veg.,
Also, we use red pumpkin(parangi) and sweet potato as a main veg., since they are sweet veg., which is very important for thiruvathirai kootu.
Take the veg.,(whichever u want) and a handful of thoor dhal and cook them in the cooker separately with turmeric. Now, do seasoning in gingelly oil or coconut oil, add mustard, curry leaves, hing and urad dhal. Add required qty of water, salt, tamarind(optl. sambar powder), let them boil.
Now, add the boiled veg., and cooked thoor dhal. Mix them well.
For masala powder, fry 2 tbsp of dhania, 1 tsp of urad dhal and channa dhal each, red chillies, 1 tsp of fenugreek seeds and a handful of coconut, fry till it is light brown. Grind them nicely.
Add the above powder to the kuzhambu and u can have the kootu either thick or watery.
For more taste, add half of tomato when u add the veggies.
