Is there a recipe for perfect ravadosa? The way they make in the restaurants? I have heard about a dozen completely different recipes. some call for soaking and some don't.
Please don't skip any steps assuming I can figure it out. Thanks.

Hi vasudha
Here is my perfect rava dosa.i follow this method always.
1 cup fine rava
2 table spoons rice flour
2 table spoons maida
2 table spoons curds
1 tea spoon jeera(cumin seeds)
1/2 tea spoon mustard seeds
salt to taste (approx 3/4th tea spoon)
pinch of baking soda
Mix all the ingredients except soda.Make a thin batter keep aside for atleast one hour.Just before making dosas add soda, check for salt and consistency of the batter. These come out crispy and soft (however ur taste buds want).Hope this helps.
