Masala for Masala Dosai

CAn anyone tell me the recipe for masala in the masala dosa like they make in hotels?

Simple potato masala for masala dosa:
Pressure cook whole potatoes (say 3 numbers) with enough water. After cooling remove the skin and cut into small pieces.
In a dry kadai pour oil and when heated, add mustard seeds and when they splutter add urad dhal a teaspoon and some curry leaves. Add in chopped onions (half a cup) and saute well. Add in some chopped green chillies. Add in chopped tomatoes (half a cup). Add a little bit of chopped ginger. Add a teaspoon of turmeric powder, a little red-chilli powder and enough salt. Add the cut pieces of potatoes and Pour water until the potatoes just sink and cook well until they become more soft and the mixture becomes dry. Use this for masala dosa.

Do the onions have to be cooked less in this case? I always fry them well and I think the masala tastes different because of that. Also, I never used to ad water.

Dear Aarthi,
for this masala you have to cut onions lengthwise and a little thicker.You have to put more oil and fry the onions in enough oil till it becomes soft.Do it in a medium heat.No need to add water.Tomatoes are optional.All the best.
