Hi Sabrina,
Here is the basic recipe of Daal wada (chana dal) with variation tips.
Dal Wada:
Ingredients:
1 cup chana dhal
2 red chillies (variable)
2 green chillies (optional)
2 sprigs of karipatha (curry leaves)
1/4 cup chopped coriander leaves
little hing (asafoetida)
salt to taste
oil to fry
Method:
Soak chanadhal for 1 hour. Drain and grind it coarsely with very little water and red chilli. Add finely chopped green chillies, hing water and curry leaves, cilanthro and salt. Heat the oil in a karahi and take small ball#s of the batter, press them in the palm and drop in the oil one by one. Fry on medium fire until crisp. Serve with spicy chutney.
Variations:
I make the following kinds of vada with the same basic recipe (with minor alterations)
1. Add coconut along with the other ingredients while mixing. (If you wish, instead of grated coconut, you can also add thin slices of coconut)
2. Omit Hing and add finely chopped onions. (Don't add coconut here)
3. Omit Cilanthro and curry leaves, and add finely cut dill leaves. (Don't add coconut here)
4. Omit Cilanthro and curry leaves, and add finely cut mint leaves. (It is optional to add coconut here)
