Masala Papads

In restaurants,a spicy papad is served which has tiny pieces of onion, chillies etc. on the surface of the fried papad. Anyone knows how to make this tasty snack?

hi revathy,
toast the papad , the papad in the shop,or deep fry it in the oil , chop onion, green chilli , cucumber,coriander leaves very very tiny bits and sprinkle some salt and chilli powder 2 drops of lemon juice as u needed. then sprinkle on the top of papad. serve wih soup .
note:
use 1 or 2 chilli better remove seeds and chop as we use pepper papad and chilli powder it becomes to hot but if u want to hot u can , the as soon as u put the topping u have to serve otherwise the papad looses its stiffness then becomes dosai.for topping u can add some other also as u like.

Thanks pavithra ; I enjoyed the spicy taste of these papads (my hubby is not keen on papads at all) but in hotels they also sprinkle some powder on it ; is it chaat masala or something? And do you know how to make toasted papads in a cone shape or in a rolled up manner?

Hello Revathy!
Masala Papads - either fried or roasted. Sprinkle finely chopped onions, tomatoes (sans the seeds), cilantro, chilli powder and chat masala powder. Generally they are made with deep fried - jeera or plain papads.
To make a cone, cut a papad in half and roast it under the broiler. Remove and place it in left palm, with the circular side facing the inside. Place your right hand fingers and roll the papad from the corner to shape into a cone.
Use a whole papad to make a roll. Roasted papads can only be shaped before they cool down.
In a restaurant these papads are normally roasted in the Tandoor.

hello revathy,
some hotels they will use chaat masala if not u can also squeeze lime for the chaat masala taste,
yes as funcook says , toast the papad as soon as u toast u make the cone otherwise if gets stiff and cannot , for rolling as soon as u toast u keep the stuffing in one side and roll imme
