The traditional veg., for mor kuzhambu are okra, colocasia, poosani etc. If u dont get any of them, can make with egg plant, potato or even capsicum.
Other than poosani and colocasia, u can fry the rest any of the veg., in oil well till it is tender. Then, mix with the mor kuzhambu.
Season coconut oil with mustard, curry leaves and hing. Now, take a cup of sour curd and add some water, whip them well till it is even. Add a bit of turmeric and sufficient amt. of salt. Mix them well. Keep aside.
For grinding, take a tbsp of soaked channa and thoor dhal each, 1 tbsp of dhania, 2 tsp of jeera, a bit of ginger, 1 tsp of mustard, small piece of tomato, 2 handful of grated coconut, grind them all nicely. Now, mix them with the whipped buttermilk and add it to the seasoning. Keep the gas in sim; once the raw smell goes off, switch the gas off. Finally, garnish with coriander leaves.
For m.kuzhambu, u have to keep the lid open till it is completely cold.
So many methods are there to make the above kuzhambu, but this method which my mother does and all my folks/friends loves it very much.
Good luck!!

Hi R,
Where are the chillies in the above recipe; should we grind green chillies or season with red chillies, which is suitable for this kuzhambu?

so sorry, with so many ingredients I totally forgot it. Thanks for reminding!!
Of course, have to grind the green chillies. Some people use red chillies also for seasoning. But, I feel that recipes like avial, m.kuzhambu and kalan shd be done with green chillies, my personal opinion, ok.
Once again, thank u.

Hi,
My mum told me this very simple way of making it.
Cook the vegies like okra, colcasia, poosani, raw plantain or Senai( i don't know the english name for it, jimikand in North Hindi), ( any one) in a little water with turmeric added to it. Take some thick yogurt, grated fresh coconut, green chillies( according to taste, for serving 2 people i take just one), a little jeera, a pinch of asofoetida( hing) and grind in the mixer nicely. Once the vegetable is cooked add the ground mixture and salt and let it come to a boil. The minute u see it boil switch the gas off else the yogurt would cause the gravy to break. Season with mustard seeds, urad dal seeds and curry leaves.
My mum even makes it without coconut sometimes by just using very thick yogurt without diluting and for cooking the vegies also use just enough water so that there is just a 2-3 spoonfuls remaining after the vegetable gets cooked.
Sheela.
