I have a question about vegetarians!

All times in EST +10:30 for IST.

People who follow vegetarian food like Brahmins & Jains do so because they feel it's sinful to kill an animal & eat its flesh.
But according to Science, trees & plants also have life. Hence is it not sinful to cut a plant (I mean 'kill it') and eat it?
In what way does the shastram justify this?
Or is it like, vegetarians were eating only fruits & vegetables which fell down naturally from the trees, which, as time passed, changed like "cut & eat"?
Please let me know if you have an answer!!
