Vatral Kuzhambu with Sambar Vengayam and Poondu posted on Wed Jul 11 07:00:34 is an authentic one of Chettinadnadu Style. This is how we prepare and tastes nice. Thanks. I was looking for this for a long time.
There are lot Kozhambu Varities of Kongunadu Style
using with tamarind and without tamarind. For kozhambu made out of Bottle Gourd, Ridge Gourd, Cabbage etc. tamarind is not used. And also there is different variety of Kara Kozhambu of Kongu Nadu style available (In the areas of Coimbatore, Pollachi, Udumalpet, Dharapuram, Erode, Tiruppur etc.etc.- Gounder Style) If you know these, kindly post it in Forum or on your website

Veggie Kothu Paratha

Ingredients :
4 meduim size flour tortillas or desi rotis
Egg white- about 1/2 cup
Rasam powder- 2tspG
reen chillies- 2-3
Lemon juice- 3 tsp
Onion- 1 finely chopped
Curry leaves- a string
Coriander- half a bunch, finely chopped
Tomatoes- 2 finely chopped
Garlic- 2 cloves
Salt according to taste
Oil- 2 tsp
Jeera, sesame seeds,turmeric and ginger 1/2 tsp each
Procedure :
1.Heat the tortillas till they are a little hard. 2.Tear them into small pieces aound 1/8" wide. 3.Heat oil. Add sesame seeds. Add jeera and turmeric. Add curry leaves. Then add ginger. When ginger is roasted, add garlic cloves, crushed. 4.Meanwhile heat water and drop tomatoes in it for 1/2 a minute. Take them out and immidiately dip them in cold water. Peel the skin, remove seeds and dice.
5.Add onions to the seasoning mix and fry till golden brown.
6.Remove to a plate and fry egg in the same pan as you would do for anda bhurji.
7.Remove when egg is completely done- kind of golden color.
8.Roast tomatoes till you get that roasted aroma. 9.Remove from the pan and set aside.
10.Heat a little oil, add tortillas or the parathas you tore/ cut earlier. Add masala. 11.After a minute, add the seasoning, eggs to the parathas and mix well.
12.Add tomatoes and mix well.
13.When it is all kind of mixed up, looks blended, add lime juice, corainder and mix well. 14.Serve with sour cream.

KOTHU ROTI (SRILANKAN STYLE)
Tastes Excellent
Ingredients:
4 Godhamba Roti (see recipe) cut into stripes of approx. 2" x 1/2" (inches)
2 cups of Curried meat (beef, lamb or chicken) : Follow recipe for beef curry but make it dry without too much gravy. If using chicken, use chicken breast cubes without bones.
2 eggs lightly beaten
1 onion sliced
1-2 green peppers sliced
1 cup cubed tomatoes
4-5 curry leaves
1 inch piece Rampe (optional)
3-4 tbs. Vegetable oil
Salt & pepper to taste
METHOD:
- Heat the oil in a frying pan.
- Add curry leaves, Rampe, onion and fry until the onion is lightly
brown.
- Add green peppers & tomatoes and stir for few minutes.
- Add egg and stir well to coat all the onion & tomatoes.
- Add the curried meat. Stir well.
- Cook for few minutes.
- Add the stripes of Godhamba Roti, stir and allow to cook for few
minutes longer on reduced heat.
- Adjust salt & pepper to taste.
- Serve hot or cold with chili Sauce.
You can mix & match other vegetables as preferred.
