Hi,
I am working and when I get home from office, I feel very hungry and end up having junk food with tea.
I would like to have an early dinner, but it takes atleats 1 hour to prepare it and I need some kind of snack before that.
Could anyone suggest any easy to prepare snacks that are not too heavy?

Hi Aarthi,
Got this from a site. I tried long time back and it was really good, and if u make more, can take with dinner too.
One more thing-can make without sprouts(made with rice flour alone & other ingredients), so just make whatever items u have, the most important things are rice flour, cucumber and onion.
Healthy Thali Pattu
Note: All ingredient quantities are ap prox.
Ingredients
Cucumber 1 medium
Onion 1 medium
Rice flour 1 1/2 cup (or mixed flour - ragi, rice & jawar)
Boiled green gram sprouts
Green chillies 2 (finely chopped)
Coriander (finely chopped)
Jeera 1 tsp
Salt to taste
Method:
Grate cucumber, chop onions, green chillies and coriander leaves and add flour to it.
Do not use water as the water/liquid from the cucumber is sufficient for making the dough.
Then add boiled sprouts, salt and cumin jeera and mix well. The consistency of the mixture to be for patting it in girdle.
Then take a kadai and grease it with oil, take a ball of mixture and pat it on a greased kadai in a circular pattern with your fingers.
Then heat until the bottom of roti becomes turns brown and the roti turns it colour.
, the rotis turn out to be very soft & tasty.

Have u tried making poha upma without any veg., or onion? Because my mother used to make after the delivery period, in the evening( since I was nursing, could not take any junk or oily food) It is not a neither heavy,nor do any harm, time consuming tiffin also.

No, What do u add to it? Only season poha with green chillies, turmeric and salt?

It is better to go with thin poha since it will get cooked fastly. Soak the same for 15 to 20 mts max., drain water, if any.
Season in oil with mustard, red/green chilly, urad dhal, curry leaves(optl), add the drained poha, fry them till it is soft. Add salt. Just 2 handfuls of poha is enough for a mini tiffin.
Can add coriander leaves or coconut for more flavour, or simply add a bit coconut oil. This is the simplest version of making poha upma.

Hi Aarthi,
Try this. All the ingredients are app.,
Take a cup of semolina(sooji), 1/2 cup of curd, red chilli powder or cut green chillies, frozen veg., or fresh veg., cut onions, tomatoes, salt, curry leaves and coriander leaves.
Mix all of them(if need add little more water) and make this batter like cutlet's, I mean the consistency. Pat them just like we do for cutlet or thalipeet, in a tava, place four or five, apply oil, wait till it is light brown.
You dont have to add all the veg., frozen veg., is alone enough.

Hi,
If you have any left over rice then You may make Masala rice.
In a pan add oild, mustard seeds, curry leaves,chopped onions, chopped potatoes, tureric, green chillies and salt. When vegetables get friend add the left over rice and mix well. Garnish with coriander. Easy to cook and yummy to taste!!

This is called vella (jaggery) dosa. It is a very common evening tiffin in Tamil Nadu. If you like mild sweets, then you can go with it.
Wheat flour 1 cup
Rice flour 1/4 cup
Jaggery 1/2 cup
Cardamom little
Rest of the things like coconut, cashew, may or may not add since you are asking for a light tiffin. Without these two things, the taste will be better, as far as I am concerned.
Take little water, add jaggery and once it is dissolved well, add the other ingredients. If u need, add more water. Wait for 10 mts. then start making like dosas. That is it.
During fasting days, my parents use to make plain wheat dosa. Replace sweet and spices by salt, green chilli, jeera and onion(optl.). With water, u can add little bit curd. Start doing dosas.

I usually add garlic powder to a tablespoon of oil , spread it on a plate and press a slice of bread on it both sides and toast it/bake in an oven for 5-7 minutes depending upon how crispier i want it. I even add Oregano, red pepper flakes after I take it out. You can sprinkle jeera if you want before baking and it tastes good.
One more idea is to get puffed rice(marmaralu) from an indian store and add chopped onions, tomato, coriander/cilantro, lime juice, with salt, jeera, and red pepper powder. It helps not to fill your stomach before dinner and also is a quick snack.
I saw a friend of mine doing this, she adds butermilk/water to gram flour(besan) and adds chopped cilantro, onion, jeera, salt and red pepper to spread as vegetarian version of omlete.

Also, I sometimes stuff a long mirchi with the stuffing and bake it for few minutes. The stuffing is made of besan, oil, ajwain, salt, and amchur.You can stuff a green capsicum also. Works the same when baked till cooked.

I tried the whaet dosa spicy and the left over rice.
Tastes real good and it's quite fast to make too.

You stuffed mirchi recipe sounds good. How do make the stuffing?
