I need to know how to make sambar/pulikulambu/kettikulambu/more kulambu etc
and kootu,poriyal,varuval etc and other items for breakfast and lunch all in chettinad style

hi mona,
i can give u the recepie for chettinad style pulikuzhambu-
Ingredients Reqd-
Pearl Onions Peeled 1/2 cup
Peeled Garlic 10 Pods
Tamrind Medium Lime Size
Sambar Powder 2-3 TeaSpoon
Salt to taste
Tomatoes 2 Finely chopped
Oil to fry
Jagerry If u wish a little bit
Dried Onion Vadagam
For seasoning-
Aniseed(Saunf)1/4 Teaspoon
Fenugreek 1/4 Teaspoon
Method-
Make Tamrind Paste by mixing it with water
Take a Pan heat oil,add the seasoning ingredients,garlic,then onion fry it well and then add tomatoes.
Wait till tomatoes become waterish and then add sambar powder and fry for 1 mnt, then mix then tamrind paste with adequate water, add salt and allow the kuzhambu to boil. then fry the onion vadagam and mix it in the kuzhqambu.
this can be had with idli, dosai, rice.

I have a recipe for chettinadu califlower:
califlower-1 (medium)
garlic pods-6
red chillies-5
tuar dal - 1/4 cup
soak dal for 1/2 hour . grind it along with garlic and red chillies - without water- to a course paste. add this paste and salt, to califlower pieces.
Heat some oil and cook the califlower in it.

I don't understand when you say "heat some oil and cook the cauliflower in it"
Whether it's the stir fry or the deep fry?

i meant stir fry. if necessary , just sprinkle some water and cook the califlower.

Hi Kalyani,
Dried onion vadagam is called "Vengaaya vathal" in tamil.
In malayalam, u could possibly call it the same or "Vengaaya vattal", otherwise :-)
You cd easily get it in any departmental store. Happy cooking

hi sakshi
here is a recepie for vathal kuzhambu
put 4-5 spoons oil,then mustard seeds then asafoteda(perungayam),curry leaves, red chilli(1 n0) fenugreek seeds 1/2 tsp, kadalai paruppu (1 spoon,)urad dhal (1 spoon) then onions (if it's small 10-12) then add turmeric powder, then sambar powder 2 spoons finally tamarind paste & salt
allow it to boil
so that the oil get seperated
if it's too spicy u can add salt & oil accordinglt
for onion vathal kuzhambu it'll b tastier if u add 1 tomato alon with it
fry it along with onion
note:it smells nicely only when u fry the sambar pwder along ( not as v usually do for sambar after v put tamarind paste)
try this
u can do the same vathal kuzhambu method
instead u can use
brinjal
